I already posted Bill’s meatloaf recipe a few years ago on Life Is Fare, but now you can see the chef in action as he prepares this cozy comfort food. It’s wheat-free, corn-free, and dairy-free, and made with grassfed beef and pastured pork. Happy food heaven!

Comfort Food: Bill’s Meatloaf


Meatloaf is one of those easy supper meals that many people associate with comfort food, especially in the winter. But most meatloaf has bread or breadcrumbs in it. So what do you do if you’ve got wheat allergies? Use oatmeal.

I love Bill’s meatloaf recipe. Here’s my account of how he makes it. What a treat to have a husband who knows how to cook, and makes a delicious meal to come home to after a long work day.

Bill’s Meatloaf

Note: Instead of milk, Bill uses rice milk, due to his dairy allergy. And instead of all ground beef, he uses 1 lb. of ground beef plus 1/2 lb. ground pork. Grassfed, of course.

First, he mixes the two meats together.

Then he mixes up the eggs and adds it to the meat mixture.

Then, he adds the eggs to the meat along with the oatmeal….

As much as I love to eat meat, I hate getting my hands in it. And it’s not because I’m squeamish….I never had a problem dissecting the crayfish in eighth grade or fileting fish I caught or even cutting up a chicken, but maybe that’s because those tasks involve tools. Kind of like a surgeon? There’s something about the coldness of the meat and the grease on my hands. Ugh. I’m happy to watch him instead!

The whole mixture goes into a loaf pan and then into the oven.
