Dan Barber, Executive Chef and Co-Owner of Blue Hill Farm, and my hero in the culinary world, talks about better-tasting wheat at the MAD Symposium–a collaborative, educational forum for people who are mindful about the food they cook and eat. It’s held in Copenhagen. (Mad means food in Danish.)
