While in Grand Rapids, Michigan, checking out ArtPrize, Bill and I ate at Bistro Bella Vita for lunch. Part of the Essence Restaurant Group (which includes The Green Well–one of our favorite restaurants in Grand Rapids), their tagline is “Fresh. Natural. Local.” Here’s what they say on their website: “We prepare every dish from scratch to your order, with the freshest, highest quality ingredients available, because fresher ingredients make the freshest cuisine. In-season, we use chemical-free produce purchased daily from local farmers. It’s healthier, fresher and tastes best.”
They also cater to special dietary needs, including a gluten-free menu and custom dishes created for vegan and lactose-free diets. This is a great option for Bill.
However, when I asked our server if any of the meats on their menu were grassfed, she said no. So I opted for the vegetarian Spinach-Goat Cheese Gnocchi.
While I was pleased to see Dancing Goat Creamery cheese on their menu to support their philosophy of sourcing local products, I’d love to see our local restaurants offering grassfed meats. I can’t emphasize how important it is to provide this option for carnivores, and to start influencing change in the industrialized food system, which is wreaking havoc on our health and our environment.
